Green Saffron's bespoke spices are discovered in Limerick...

Of all the things we thought we might discover in Ireland I am sure that great Indian spices were not necessarily at the top of the list; however, at the Milk Market in Dublin we spotted among the stalls a great company called Green Safron. The company, based in Ireland, specializes in Indian spices and foodstuffs.

Many Indian spices (especially found in grocers) tend to be heavy handed but these spices have the best, most distinctive smell of any Indian spices we have ever sampled. Indeed, the aroma wafted through the marketplace and drew us to the companies rafish booth. Green Safron's stuff is described by the company as "bespoke" and this seems completely appropriate to the product and the company's raising the bar on Indian cuisine.
